Red or Green?

New Mexico cuisine is a distinctive combination of Native American foods - such as squash and blue corn - with pork, flour and, of course, chiles favored by early Spanish settlers. When ordering breakfast, lunch or dinner, you’ll be asked the “red or green” question. Chiles go with just about everything! (Tip: If you want both, say “Christmas.” Dishes include burritos, enchiladas and sopaipillas. A good place to try is Ben Michael’s Cafe in Old Town (2404 Pueblo Bonito Ct. NW), with serves a great selection of tacos, tostados and enchiladas.

A great, amateur-friendly place to sample authentically Native American dishes is the Indian Pueblo Cultural Center (2401 12th Street, NW) where they serve fry bread and hominy.
